There were so many creative retellings of stories to choose from! But I managed to narrow it down to three.

Peter Pan (1954 musical) by Wikipedia

Storybook:
The Darling Tales of Wendy

I've always loved this story as a child. There's always been a daring sort of whimsy to Peter Pan and Neverland. Kids versus pirates, Peter versus growing up, and it's a love shared by many and the proof is in the multiple versions of the story and it's characters in media since it's creation. The way this story was told through letters between Wendy and Michael gave it an intimacy. Like we were almost intruding on a private conversation between the siblings. This storybook was very well done and moved me as the siblings struggled with Peter's irresponsibility and their inability to move on as the leader of the Lost Boys returns for their children.

Storybook: Olympus University

Olympus University: OU. How clever! I'm weak for when authors throw characters from different settings and periods into modern times, and this writer did a fantastic job of placing Greek mythology heroes like Achilles and Hercules into a university setting. They even added their own take on the Orion mythos. It was a fun read!

 Storybook: Odysseus Vs Wild

Odysseus' trials as he struggled to make his way home was so appropriate for this version where they turned it into reality TV. Using brackets for actions and spoken lines in quotation marks made it easy to picture each scene, and I could just see Odysseus looking at the camera like in 'The Office' as Poseidon threw another trial his way.
